These guys, the Pay 'n' Spray shops found on each island, will become your best friends. Make sure you know the fastest way to get to them from every corner of the city. For a thousand bucks they fix and repaint your car, even when you drive it in with a burning engine. Best of all: the cops won't recognize you anymore so you'll lose all of your wanted level :-)

The Wanted Level is shown by six police stars in the upper right corner of the screen. When you steal a car under a cop's nose your wanted level will be one. If you kill the cop that's trying to bust you, you get a second star. With the third star the police helicopter shows up, and so forth... When a level of six stars is reached you've pushed them far enough to start a damn war against you...
In the first stage of the game (on Portland) you can have four stars maximum, at Staunton island five, and six once you have managed to reach Shoreside Vale.
You can loose one star by walking or driving through a small item resembling a police badge. There aren't many, so know where they can be found. Similar items exist for Health and Armor (both restore to 100%) and a few other gadgets.

It is good that cars can be fixed and sprayed, but sometimes you just need to get rid of evidence. Then it's time to visit the Car Crusher. Park your wreck inside the area marked with tyres, and don't forget to get out... The crane will pick up the car and place it in the yellow grinder. End of car.

Gone In 60 Seconds, anyone? (See website)
In this movie fifty cars have to be stolen in just one night. They keep a list of the cars they need in a warehouse at the harbour, from which the cars are shipped directly.
The list you see on this warehouse in Portland Harbour is a similar list. It contains the names of 16 vehicles, including the Dodo, which is a wingless airplane found at the Airport on Shoreside Vale. You get paid for each car delivered and a bonus awaits you when you complete the list. This is one of the reasons why you see the name of the car displayed when you get in.
There is another so-called Import/Export Garage at Shoreside, with a different list of wanted vehiles.

The Liberty City Police Department, with a cop passing by and a hooker waiting for bussiness. When you get busted, you end up in front of this building (if you're on Portland). It will be several hours later, you'll find some cash missing and oh yeah, all your weapons are gone... If you were on a mission, it failed (figures!).

The fun part about the hookers is that you can actually let them get into your car, after some negotiations about the price of the service, as shown here. Once she gets in you drive to a quiet place, preferably under some trees or so. When the (invisible) "action" starts you'll see your health increase to a max of 125%(!).
At the same time your amount of cash decreases. This decrease starts as soon as she gets in, so don't drive around the city with a hooker for company all day, or you'll end up broke...
Sick people let the girl do her job and kill her when she's done in order to get their money back. Well.... it works :-)
By the way: almost every citizen on the street carries money, in different amounts. When you're lucky and you run over a hooker that has had a good night, the street will be littered with shiny green packages of money smiling upon you. Also, an amazing amount of the LC citizens carries a weapon. Dangerous, maybe, but very handy to know when you're out of bats or guns and you really need one.

I just parked my stolen cab at Joey's Garage (the cop doesn't seem to be bothered by my style of parking). In order to climb on the criminal career ladder you'll have to do some work for for the rivaling mafia gangs in Liberty City. One of the first members of the cartel of Salvatore Leone you meet is Joey. If he has work for you, you can come to his garage near the harbour. Just step into the blue circle after you have "parked" your car. You'll get a cut scene (created within the game engine) that shows Joey telling you what today's criminal job is.
Jobs start out with picking up and dropping of people. Easy enough. But soon you'll get to place your first car bomb and before you know it you'll be sent out to "ice" some opponent gang members or dudes that talk too much.
